3 Ingredient Paleo Cookies

Last night, I was craving cookies but the only issue? I didn't have a ton of ingredients to work with (because I recently moved into a new apartment). So, I rummaged around my cupboards and grabbed all of the ingredients I could find that could potentially result in cookies.

Here's what I pulled out: almond butter, bananas, almond flour, shredded coconut, cinnamon and walnuts. Sure, lets go with it. I know that this is more than 3 ingredients but the coconut, cinnamon, and walnuts are all optional so you really don't need to add any of them if you prefer not to!

They took me a total of 20 minutes to make (winning). I will admit, they tasted a bit more muffin/cakey than cookie-like however, they still cured my sweet tooth and I didn't even feel bad about eating them. This recipe makes about 10 cookies...I even ate a couple for breakfast the today, no shame. I'll definitely be making them again because they're so simple and quick to whip up but I will for sure be adding dairy free chocolate chips!

Ingredients:

  • 2 bananas

  • 1 1/4 cup almond flour

  • 1/4 cup creamy, natural almond butter - I use Trader Joe's unsalted

  • 1/4 cup unsweetened shredded coconut (optional)

  • 1/4 cup crushed walnuts (optional)

  • 1/2 tsp cinnamon (optional)

Directions:

  1. Preheat the oven to 350 degrees and grease a cookie sheet/tray and set aside.

  2. In a large mixing bowl, mash your overripe bananas and add almond flour and almond butter. Mix until fully combined. Mix in the crushed walnuts and cinnamon now if you decide to use those ingredients (or even chocolate chips of choice)

  3. Using a spoon or your hands, form into small balls and transfer to cookie sheet

  4. Sprinkle the shredded coconut on top of each cookie (optional)

  5. Bake for 12-15 minutes, until golden brown on top
