Guilt Free Chocolate Chip Cookies

Who doesn't love chocolate chip cookies, seriously? There's something super comforting about warm chocolate chip cookies, especially with a glass of cold milk. Now that the seasons are changing and we’re gearing up for the holidays, cookies are bound to happen. If you’re someone like me who is trying to balance eating healthy with trying to satisfy your sweet tooth, then you need to try this recipe! I absolutely love these cookies because I don’t feel guilty at all when I make them! Here’s why I consider them “guilt free”:

  1. Unlike your traditional chocolate chip cookie, this recipe has NO added refined sugar. Instead of sugar, I use maple syrup to naturally sweeten them. You can also use honey if you do not have maple syrup!

  2. They’re full of healthy fats. Walnuts, coconut oil and coconut flour are all really great sources of fats. But just because they have lots of fat doesn’t make them bad for you! Here are a few health benefits of the three ingredients:​ Walnuts are rich in omega 3’s and help to lower LDL (bad cholesterol). Coconut Oil, like walnuts, promotes heart health and lowers the risk of heart disease. Coconut flour is high in fiber, protein and healthy fats and is free from wheat and other grains. Also low in sugarAside from these health benefits, fats generally help to keep you fuller longer which can help to manage weight!

  3. They’re dairy free! If you’re paleo, lactose-intolerant, or you just like to limit your dairy, you can still have these chocolate chip cookies! I use the Enjoy Life chocolate chips but there are other brands that make dairy free chips as well. Or – try cacao nibs if you prefer those!

Added bonus? You’re friends and family won’t even know they’re “healthy!” The first time I ever made this recipe was when I was visiting my parents. My mom and dad absolutely loved them! My family ate the whole batch in a couple of hours and my dad even asked me for the recipe so he could make them whenever he wanted!

What I love most is that you can add your own twist to them and mix up the recipe to your liking. You can sub out the walnuts or chocolate chips with whatever you want! I have tried this recipe with unsweetened raisins instead of dairy free chocolate chips and they were still really good. If you don’t like walnuts, feel free to sub any other nuts you do like. Like I mentioned previously, if you don’t have any maple syrup you can also use raw honey.

Ingredients:

Dry:

-1/3 cup coconut flour

-1/4 cup unsweetened shredded coconut

-1/4 cup crushed walnuts

-1/4 dairy free dark chocolate chips (or you can substitute raisins)

-Pinch of sea salt

Wet:

-1/3 cup coconut oil

-2 eggs

-1 tsp vanilla

-1/4 cup maple syrup (or honey)

Directions:

Preheat your oven to 350 degrees. In the meantime, mix your dry and wet ingredients in two separate bowls. You may need to heat your coconut oil until it is melted to mix better. Add your wet ingredients to the dry ingredients. Spoon your cookie dough onto a greased cookie sheet. I like to make quarter-sized balls and flatten them down with a fork. Bake your cookies for 10-12 minutes or until the edges are golden brown. This recipe yields about 12 cookies!
