Cinnamon Apple Cauliflower Oats

I know what you're thinking..."cauliflower oatmeal, that sounds gross," but it's surprisingly delicious! I recently discovered this hack while doing Whole30 and I can safely say I'm never going back to normal oatmeal. I won't lie, it doesn't look amazing but it tastes HEAVENLY.

Now, I know you're not suppose to "recreate meals" during Whole30 but there's only so many eggs and chicken sausage a girl can eat so I had to get creative. I've made cauliflower oats before but I could never perfect them until now - I really think the coconut oil makes all the difference. Also, I don't know about you guys but I'm a volume eater. With this recipe, I feel like I'm eating way more than I actually am and it keeps me full all morning because of the protein from the egg whites! I will say that I find the frozen Trader Joe's riced cauliflower works best for this recipe and cooks a lot faster, so that is what I prefer to use.

Ingredients:

- 1 cup cauliflower rice

- 1/2 cup egg whites

- 1 tsp cinnamon

- 1 tsp coconut oil

- 1/2 diced apple

- 1 tbsp almond butter (I use Trader Joe's unsalted)

Directions:

In a medium sauce pan, melt coconut oil over medium heat and then add your cauliflower rice and cinnamon. Let that cook for a few minutes, stirring occasionally. Once that cooks for a few minutes, add in your egg whites. Continue to stir until you notice that the egg whites have cooked through (they will thicken and turn white), about 5 minutes. Next, you'll add in your diced apple and allow that to cook for a few more minutes over low-medium heat, again stirring occasionally. Once that's done you can transfer to bowl and top with almond butter (or any nut butter of choice).

If you don't want to use apple, you can also stop before adding in the apple and instead top with any other fruit of your choice. I like to add both berries and banana from time to time!
